Recipe: Pwason an Sòs

Fish in sauce

Time: 60 mins Serves: 4

Ingredients

Dri Blan (“White Rice”)

  • 2 cups of rice
  • 3 cups of water
  • 1 tsp of salt
  • 4 tsp of oil
  • 5 cloves of garlic, minced
  • 2 green onions, thinly chopped

Pwason an Sòs (“Fish in Sauce”)

  • 2 pieces of white fish
  • 3 lemons
  • 1 Tbsp of oil
  • 2 tsp of salt
  • 1 cup of water

Directions

  1. To make rice, heat pot over medium heat. Add oil, garlic, green onion, stirring for 2 minutes. Add salt and water and bring to a boil, then add rice. Boil for 2 minutes, reduce to simmer for 30 minutes or until water fully absorbs.
  2. Clean fish, then cover in the juice from the lemons and salt, letting marinate for 10 minutes. Heat oil in pan, add water and fish and let boil for 15-20 minutes. Serve over rice.
